Citrus Baked Mahi-Mahi

2 Mahi-Mahi Portions 4-6 oz
1 ea Orange
1 ea Lemon
2 ea Limes
Canola Oil
Salt and pepper to taste

Citrus Butter Sauce Ingredients:
¼ Cup White Wine
¼ Cup Citrus Juice
1 Tbsp Heavy Whipping Cream
1 Tbsp Unsalted Butter
¼ tsp Granulated Sugar
Salt and pepper to taste

Cooking Directions:
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Zest all of the citrus fruits and reserve.
  3. In a separate container juice both limes, half of the lemon and quarter of the orange.
  4. Season the Mahi with salt and pepper. Add Tbsp of canola oil to hot sauté pan ( just enough to coat the pan).
  5. Place Mahi into hot pan show side down. Gently move the sauté pan to ensure fish is not stuck. Cook till light golden crust on edge of the fish ( 30 – 45 seconds).
  6. Without flipping the fish, place the sauté pan in the oven. For well done cook approx 8-12 minutes.
  7. Once desired temperature is met, pull pan out and let sit.
  8. Using a spatula or kitchen tongs gently flip your fish over. Pour white wine and citrus juices into the pan. Set burner to medium/high heat. Add sugar, citrus zest, heavy cream and butter.
  9. Gently stir the liquids in the pan and serve when ready.
